What if everything in life was not such a long winded process; what if we could see the results in just a few minutes? Fortunately, there are things in life that aren't that long drawn or tedious.
Well while you ponder about it, I in the meantime, will bake my cake and eat it too. Or you can do otherwise and join me and we all can have a bake off with my two minutes chocolate cup cake baked in a microwave! Uh..uh..uh, before you pass any judgement try it out and see and taste it for yourself. Minimum effort, maximum comfort is the mantra here.
This is a recipe I go back to when i need a quick fire companion for my tea sessions, be it it in the morning or in the afternoons. This soft and luscious cake is so easy to make and my family loves it, so it's 'two strokes of luck'. Here I am sharing this winning recipe.
Prep time: 5-10mins
Cook time: 2 mins
Serves: makes 6 cup cakes
6tbsp refined oil
6 heaped tbsps plain flour
4tsp cocoa powder
1tsp baking powder
6 coffee mugs/cups, microwave friendly.
Grease the coffee mugs with oil, keep aside.
For the wet mix, in a bowl, beat eggs, add the sugar and oil and beat again till light.
Sift together the flour, baking powder and cocoa powder.
Add it to the wet mixture and mix well to form a smooth cake batter.
Now pour the cake batter into the greased mugs and fill upto one third of each mug/cup.
Microwave for two minutes in 100% power.
Voila your chocolate cup cakes are ready to be devoured, with pleasure.
