Garlicky Veg Noodle soup

This simple, yet wholesome and packed full of goodness from vegetables and garlic is my go to dinner when you need a light & easy quick fix.

Garlicky Veg Noodle Soup



Serves 4


1l veg or chicken stock

150gms medium egg noodles

150gms mixed veg - diced carrots, beans, peas and sweetcorn

4-5 fat cloves of garlic, crushed

5gms crushed peppercorn

2tbsp soy sauce, salt to taste


In a deep saucepan, add stock, vegetable and garlic,bring to a boil. Lower heat to medium and keep stock on rolling boil for about 5-6mins. Now add noodles, crushed peppercorn and cook for further 4mins. Before finishing add soy sauce, check seasoning and add salt if needed. Some soy sauce and readymade stock have added salt in them. Serve hot immediately.
