Easy Peasy Cheesy Penne

My twist at this healthy pasta with broccoli, cauliflower, sweetcorn in bolognese sauce and generous sprinkling of cheese!

Serves 4


300gms Penne pasta (or any other tube pasta e.g. Rigatoni), cooked as per instruction on pack.

350gms Bolognese sauce, I have used ready made shop bought Dolmio sauce, you can use any that is available.

2cups frozen or fresh mixed vegetables - broccoli florets, cauliflower florets, carrot sliced into roundels and sweetcorn

1tbsp dried crushed mixed herbs (oregano, thyme, rosemary, basil,marjoram)

1/2 tsp dry red chilli flakes to add flavour and punch

3cloves of garlic, finely chopped

1tbsp olive oil

salt to taste

Parmesan cheese, grated, qty- to your liking. You can use mozzarella instead or Cheddar, but bear in mind Cheddar can be a bit heavy so use sparingly.


Toss cooked pasta in little bit of olive oil so that they do not stick together and keep aside.

Heat oil in a pan, add chopped garlic, saute for few secs(do not burn them). Add mixed vegetables and dried mixed herb. Continue to cook until they are done but have a bit of crunch in them. Do not overcook!Now add salt, bolognese sauce,chilliflakes and gently toss the vegetables together. Let it simmer gently for a couple of minutes. Now tip in the cooked pasta and once again, gently toss everything and let it heat through. Serve immediately with a generous sprinkling of grated cheese.

Hints & Tips:

I have tried this with grated Cheddar cheese on top and gratinated it under a grill, which turned out delicious too...

If you are using frozen mixed veg, you can de-frost them in a microwave oven to reduce cooking time on the hob. Drain and keep aside.
