Crunchy Green Salad with radish and baby plum tomatoes
A fresh green salad with crunchy lettuce, sweet plum tomatoes tossed in an easy dressing.

Ingredients

For Salad
2 iceberg or gem lettuce, leaves roughly torn
3-4 leaves of chicory
1/2 cup radish, thinly sliced
1/2 cup cucumber, thinly sliced
1/4 cup red onions, thinly sliced
8-10 baby plum tomatoes or cherry tomatoes
leftover roast chicken or chicken tikka or honey glazed chicken , pulled or shredded (optional)
For dressing
1tsp Dijon mustard
2tbsp white wine vinegar
4tbsp of extra virgin olive oil
pinch of salt
pinch of sugar
pepper, cracked in a pepper mill or pestle mortar
Method:
For the salad dressing, mix all ingredients in a bowl and whisk to a smooth consistency, keep aside
Arrange all the salad vegetables in a deep bowl, pour the dressing all over and mix well.
Top up with the pulled/ shredded chicken pieces (optional).
Fresh and crunchy green salad is ready.
