My take on this popular Chinese dish, quick, easy one pan recipe.

600gm cooked and cooled rice
50gms each, julienned or shredded cabbage, carrot,sweet pepper, mushroom
15gms fresh ginger, julienned
2 green chillies, finely chopped
4 eggs, beaten and seasoned with salt & pepper
125gms smoked bacon, diced
125gms cooked and peeled prawns
1tbsp Chinese five spice
2tbsp soy sauce
2tbsp stir fry or vegetable oil
salt to taste
spring onion, finely sliced for garnish ( optional)
Heat oil in a wok, stir fry the bacon till golden brown and crispy, about 4-5 minutes and remove. In the same pan, pour in the beaten eggs, let it set for a few secs, break it up,stir well to scramble and remove.Heat rest of the oil and add the ginger, chopped chillies and stir fry for few seconds. Add all the vegetables, Chinese five spice and salt.Stir fry on high heat, till cooked (about 4-5 mins). Now add the cooked rice,crushed peppercorn and sprinkle soy sauce. Add cooked bacon, cooked prawn and scrambled eggs and toss everything together well. Garnish with sliced spring onions and serve immediately.
